Grillin' Like a Villain

Stuck in a grilling rut? Tired of tossing the same ol’ burgers and hot dogs on the barbie? We’ve rounded up some unexpected light grilling options to impress even the most carnivorous guest at your summer BBQ. We chose three of our favorite seasonal ingredients to make a salad, dessert and boozy treat, all perfect for your next outdoor meal. These lighter options cook up quickly (seriously, keep an eye on them), and require barely any prep, which means less time grillin’, more time chillin’.

ALL UP IN YOUR GRILL

While the grill is heating up, prep your ingredients. Wash off the peaches and romaine lettuce, but be sure to dry them really well. Damp produce turns into a mushy mess on the grill. Cut the pineapple into spears, and the peaches and romaine in half.

Brush everything lightly with olive oil (we love using the Misto for this step) and place onto the hot grill. Flip everything over once they’ve reached peak char.


Grilled Pineapple Bourbon Smash

A recipe so simple, a child could do it. However, it is bourbon, so DEFINITELY DON’T let a child do it! Give that kid a Capri Sun and keep them away from the hot grill!

Toss the grilled pineapple spears into a pitcher. Cover with bourbon.

Let all the sugary goodness of the pineapple mix with the bourbon. To serve, pour over ice with a squeeze or orange or lemon juice, and splash of soda water. Yes, it’s that easy. Give it a mint garnish if you wanna get fancy.


Grilled Romaine Salad with Citrus Basil Vinaigrette

Arrange the grilled romaine on a platter and season with salt and pepper. We threw in some sliced avocado, because why not. We whipped up this Citrus Basil Dressing to add some acid to cut the char. We blitzed all the ingredients below in the food processor and were rewarded with instant green-lemony-goodness. Serve as quickly as possible post grill.


Mix all ingredients until smooth:

1/4 cup olive oil 2 tablespoons orange juice 1 tablespoon lemon juice 1/4 lemon, zested 1 tablespoon whole grain mustard

1/2 teaspoon salt 1 tablespoon honey 1/8 cup chopped fresh basil 1 teaspoon white wine vinegar



Grilled White Peaches with Vanilla Ice Cream

Toss those bad boys in a bowl with some ice cream. Lazy day dessert goal grillchieved!
